1 large French baguette (12 ounces / 340 g)
2 tablespoons (30 ml) olive oil
1 clove garlic
2 cups (300 g) cooked brisket
1 cup (150 g) cherry tomatoes
¼ cup (15 g) fresh basil
2 tablespoons (30 ml) olive oil
1 tablespoon (15 ml) balsamic vinegar
½ teaspoon (3 g) salt
½ teaspoon (2 g) black pepper
½ cup (120 g) ricotta cheese
½ cup (50 g) shredded mozzarella
2 tablespoons (20 g) grated Parmesan
Slice and toast baguette at 400°F (200°C) for 8–10 minutes.
Rub toasted bread with garlic.
Mix brisket, tomatoes, basil, oil, vinegar, salt, and pepper.
Spoon mixture onto bread slices.
Add cheese if desired and bake briefly to melt.
