A gooey, melty grilled cheese sandwich enhanced with flavorful pesto—perfect for quick comfort food.
4 slices bread
100 g mozzarella cheese, shredded
50 g cheddar cheese, shredded
3 tablespoons pesto
2 tablespoons butter, softened
Optional: sliced tomatoes or spinach
Spread butter on one side of each slice of bread.
Spread pesto on the unbuttered side of two slices.
Layer shredded cheeses on top of pesto, add optional fillings.
Top with remaining bread, buttered side out.
Cook on a skillet over medium heat, 3–4 minutes per side, until golden and cheese melts.
Slice and serve immediately.
