340 g pasta (spaghetti, penne, or fusilli)
2 tablespoons olive oil
4 cloves garlic, minced
1 small onion, finely chopped
1 can (400 g) crushed tomatoes
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon sugar (optional)
½ teaspoon dried oregano
½ teaspoon dried basil
2 tablespoons chopped fresh parsley or basil
Grated Parmesan cheese
Cook pasta until al dente; reserve ½ cup pasta water and drain.
Sauté onion in olive oil until softened.
Add garlic and cook until fragrant.
Stir in tomatoes, salt, pepper, sugar, oregano, and basil; simmer 8–10 minutes.
Toss pasta with sauce, adding reserved water if needed.
Stir in fresh parsley/basil and serve with Parmesan.
