450 g boneless, skinless chicken breasts or thighs
8 cups chicken broth
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, sliced
2 celery stalks, sliced
1 medium potato, diced (optional)
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon dried thyme
½ teaspoon dried parsley
1 bay leaf
1 cup egg noodles or rice (optional)
Fresh parsley, chopped
Sauté onion and garlic in olive oil until fragrant.
Add chicken and chicken broth; bring to a gentle boil.
Stir in vegetables, salt, pepper, thyme, parsley, and bay leaf. Simmer 20–25 minutes.
Remove chicken, shred, and return to soup.
