2 large chicken breasts, cooked and sliced
4 slices sourdough or ciabatta bread
1 avocado, sliced
4 slices cheddar cheese or pepper jack
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon olive oil
½ teaspoon salt
¼ teaspoon black pepper
1 small tomato, sliced
½ cup baby spinach or lettuce leaves
Spread mayonnaise and Dijon mustard on bread slices.
Layer chicken, avocado, tomato, spinach, and cheese between two slices.
Heat olive oil in skillet; cook sandwich 3–4 minutes per side until golden and cheese melts.
