A refreshing and creamy pasta salad packed with crisp cucumbers, fresh herbs, and bright lemon flavor — perfect for warm weather gatherings.

Ingredients

12 oz rotini pasta (340 g)
2 cups English cucumber (300 g), diced
1 cup cherry tomatoes (150 g), halved
1/3 cup red onion (50 g), sliced
1/4 cup fresh dill (10 g), chopped
1/4 cup fresh parsley (10 g), chopped
3/4 cup mayonnaise (180 ml)
1/4 cup plain Greek yogurt (60 ml)
2 tablespoons lemon juice (30 ml)
1 tablespoon olive oil (15 ml)
1 teaspoon garlic powder (3 g)
1/2 teaspoon salt (2.5 g)
1/4 teaspoon black pepper (1 g)

Instructions

  • Cook pasta according to package directions until al dente. Drain and cool.

  • Whisk mayonnaise, yogurt, lemon juice, olive oil, garlic powder, salt, and pepper.

  • Combine cooled pasta, cucumber, tomatoes, onion, dill, and parsley.

  • Toss with dressing until evenly coated.

  • Refrigerate at least 1 hour before serving.

  • Stir and adjust seasoning before serving.

Notes

Chill for best flavor. Add cucumbers closer to serving time if making ahead. Stir before serving and refresh with lemon juice if needed.
