12 oz rotini pasta (340 g)
2 cups English cucumber (300 g), diced
1 cup cherry tomatoes (150 g), halved
1/3 cup red onion (50 g), sliced
1/4 cup fresh dill (10 g), chopped
1/4 cup fresh parsley (10 g), chopped
3/4 cup mayonnaise (180 ml)
1/4 cup plain Greek yogurt (60 ml)
2 tablespoons lemon juice (30 ml)
1 tablespoon olive oil (15 ml)
1 teaspoon garlic powder (3 g)
1/2 teaspoon salt (2.5 g)
1/4 teaspoon black pepper (1 g)
Cook pasta according to package directions until al dente. Drain and cool.
Whisk mayonnaise, yogurt, lemon juice, olive oil, garlic powder, salt, and pepper.
Combine cooled pasta, cucumber, tomatoes, onion, dill, and parsley.
Toss with dressing until evenly coated.
Refrigerate at least 1 hour before serving.
